Just a quick update while I eat my lunch, a wrap filled with loads of salad and beans in case you were wondering!
Week one started off so optimistically, then, by day two I’d caught the cold that everyone seemed to have in December but I’d managed to avoid, until now! So feeling awful I took to my duvet for a few days, I didn’t have much of an appetite and so didn’t have the start to Veganuary that I’d planned. I didn’t have the energy or hunger to cook up some of the vegan recipes I’d planned to. Plus I couldn’t taste anything which was pretty crappy!
By Friday I could taste again! The weekend was spent eating spicy foods with lots of vegetables to try and clear my cold. I made a chickpea and cauliflower curry, a bean chilli with baked sweet potato and on Sunday I was feeling like I had more energy so me and my husband rustled up some homemade spring rolls. These were to go with a homemade spicy satay sauce and some steamed veg. A fairly delicious vegan weekend!
So whilst I’m still trying to shift this cold, at least I can taste again and have my energy back to experiment with some new recipes this week.
